Quick Chipotle Mayo

An easy way to jazz up mayo with some smokey flavor. Also great for using as a salad dressing base or condiment alternative.

  • 6 tbsp of mayonnaise
  • 1–2 tbsp of smoked chipotle peppers

  1. Using a small food processor, combine mayo and chipotle and puree until all peper has been incorporated.
  2. If you do not have a food processor, alternatively you may finely chop chipotle peppers or mash into a paste using a morter and pestal or muddler. Beat with mayo to incorporate.
  3. You may add more or less chipotles to taste. Additional lime juice, salt, and pepper is per taste.

Options include: adding to egg yolk to make quick deviled eggs, base for taco salad dressing, and great as a dip.
